II.  Paper

Based on the required readings and your experiences in Belize:  Write a 4-5 page typed, double-spaced paper comparing the role of natural healing in Belize with the role it plays in your culture, and how this may impact the nutritionist's role in your culture.

III.  Journal

Your journal will be a personal account of your journey in Belize.  It will be read only by your and the instructor and will be returned to you.  Entries should be legible.  Use any writing style that is comfortable for you.  Grammar, punctuation, and spelling will not be considered.  Purchase a Composition Book as your journal. Daily journal entries are required.  The entries are an opportunity for you to record experiences, sights, smells, tastes, observations, reflections perceptions, misperceptions, new ideas, desires, disappointments, "ah-ha" moments, etc ...Although the journal is a good way to record new facts and meaningful observations, it should go beyond this to include how the day's experiences have affected you and your senses.

Students will receive three (3) credit hours in NUTR 4902/6902.  This course has also been approved as a substitution for HSS 4999 Senior project in HSS.

Although our courses are credit bearing, we also encourage applications from adult learners who are keen to travel and learn, but who do not require academic credit.
