Dr. Roach spent a semester in Belize as a Fulbright Scholar teaching Nutrition at the Belize School of Nursing and working on a collaborative research project with the Pan American Health Organization She directed the Nutrition Study Tours to Belize in 1998, 2000, 2002, and 2005.
