The 33-credit hour Environmental Nutrition curriculum emphasizes the relationships between food, nutrition, and the environment. Issues connected with food sustainability, cultural food practices, food justice, humanitarian nutrition, and alternative and complementary nutrition guide the curriculum. Applied practices driven by relevant research and theoretical foundations culminate with an internship and project.

As a generalist nutrition program, students with a variety of academic preparations are encouraged to apply. We invite applicants who wish to emphasize applied work in sustainable food and nutrition practices. The asynchronous program is delivered exclusively online to accommodate individuals who could benefit with job advancement or job security through acquiring an applied Master’s degree.
