About Katie Cook
Katie Cook is an adjunct faculty member in the College of Health Sciences nutrition unit and serves as the Director of Nutrition Services for Campus Recreation in the R. Brad Martin Student Wellness Center. Before joining the University of Memphis, Ms. Cook was a clinical dietitian and Outpatient Cardiac Rehab Dietitian at Baptist Memorial Hospital- Desoto for three years. While there, she served as preceptor to many University of Memphis and UT Martin students, educated patients on eating a heart-healthy diet, developed heart-healthy recipes, implemented healthy snack options for patients while exercising, and provided medical nutrition therapy for patients in the hospital. Ms. Cook is an active member of both state and local nutrition and dietetics groups that allow her to network with many other dietetic professionals. Her favorite thing about working at the UofM is being able to teach nutrition through cooking classes with the campus community.
